Adzuki rice porridge is one of the most traditional and beloved dishes in Russia and Eastern European countries. It is known not only for its taste but also for its exceptional health benefits. Buckwheat is a valuable source of plant protein, complex carbohydrates, vitamins, and trace elements.
Buckwheat is rich in iron, magnesium, potassium, phosphorus, and calcium. It contains vitamins of the B group, vitamin E, and PP. Thanks to its high fiber content, buckwheat improves digestion and keeps a feeling of fullness for a long time.
Buckwheat does not contain gluten, so it can be consumed by people with celiac disease and intolerance to wheat protein. It also helps to reduce cholesterol levels and normalize blood sugar levels.
The classic way to prepare buckwheat porridge is simple. The grains are sorted, washed, and poured with water in a ratio of one to two. Salt is added to taste and cooked on low heat until the water is completely absorbed. The ready porridge is seasoned with butter.
For a more fluffy porridge, the grains can be pre-roasted on a dry skillet. Buckwheat is cooked with a lid, without stirring, for about fifteen to twenty minutes.
Buckwheat porridge can be thick and loose. Thick porridge is made from cracked or Smolensk grains, it is more suitable for children's food and a dietetic table. Loose porridge is cooked from groats — whole grains of buckwheat.
Buckwheat goes well with meat, mushrooms, vegetables, and milk. Dishes such as casseroles, kulebiakas, side dishes, and even meatballs are made on its basis. In Russian cuisine, buckwheat porridge with stewed meat, onions, and eggs is popular.
Buckwheat was domesticated in Southeast Asia more than four thousand years ago. It came to Europe thanks to the Tatars-Mongols, hence it is called \"Tatar grain\" in some languages. In Russia, buckwheat became so popular that it entered proverbs and sayings.
